Two Ingredient Cookies

That's right, two ingredients and about 15 minute later and you have fresh warm cookies. You can add extra ingredients to fancy them up but it isn't required, they are yummy in their simplest form. If you can't eat banana or oats we have some alternatives at the end of the recipe.


Ingredients

  • 2/3 cup of mashed banana (the riper the better)

  • 1 cup rolled oats (wheat free if necessary)

Preheat the oven to 180C

Mix the two ingredients together. Line a baking tray. Roll the mixture into small balls, place on the tray and press down. Bake for 15 minutes or until golden brown on the sides.


Substitutions

  • Substitute 2/3 cup of cooked mashed apple (or canned pie apple) for banana

  • Substitute other rolled grains (buckwheat, quinoa, amaranth) if oats are not tolerated

  • You can use quick oats if that is what you have in the cupboard


Delicious additions

Any of these additions can fancy these cookies up a little

  • Handful of choc chips (ensure they are allergy friendly if required)

  • 1/2 tsp vanilla extract

  • 1 tbs coconut oil (adds a bit of crispness)

  • 1 tbs maple syrup for a little added sweetness
