Raspberry Oat Balls

An easy, versatile, freezer friendly and fun snack. They are quite pretty little things too!


Makes - a large container full

Prep - 5 mins (plus 10 mins rolling time)

Ingredients

  • 250g (2 cups) frozen raspberries

  • 300g (3 cups) wheat free oats

  • 120g (1 1/3 cups) desiccated coconut

  • 6 soft Medjool dates or 2 tbsp. chia seeds

  • 4 tbsp. maple syrup

  • Extra coconut for rolling ~ 1/2 cup

Directions

  1. Add all ingredients to a food processor, mix until very well combined (approximately 5 minutes)

  2. Place spare coconut in a small bowl

  3. Roll the mixture into balls, toss in coconut and place in a container

  4. Store in the fridge or freezer, they taste great straight out the freezer so I find it the easiest way to store them.

Substitutions


You can also swap out raspberries with other frozen fruit. We have tried cherries, mixed berries and mango - all delicious.


"Can I have them in my lunchbox everyday?!"


These are a fantastic lunchbox and afternoon tea snack. We also serve them at parties. You can have a lot of fun with them. Roll them in 100s and 1000s, coat them in chocolate and pop them on a stick like a cake pop.


As an added bonus they are so easy that the kids can make them. Tiny ones can do the rolling,
